This kadhi is different from normal besan kadi since it uses whole wheat flour instead of besan. Many people use a mix of besan and aata or even just besan too like normal kadi, but since my dadi, nani & mom has always made chane, Sangri or ker ki kadi with aata, l've followed the same process.

Mix together dahi, flour and water in a bowl ; add garam masala, kachri powder & keep aside.
Add ghee into a heated pan. Add hing and jeera and allow the jeera to crackle

Then add boled sangari ; Stir well for about 2 minutes. Add turmeric powder chilli powder & salt mix well
Add 1/4 cup of water and allow it to cook for 3-5 minutes. Remove 3-5 spoons of color from the top and keep it aside for later use.

Now add the mixture of dahi & wheat flour ; Keep stirring for 4-5 mins.
Keep a big spoon in the pan and cover it with a lid. Let it cook on low flame 🔥 for 15 -20 mins. Stir in between very gently.
This will ensure that the ghee or "rang" of kadi comes out very nice. You can see in pic - 6
It's my dadi & nani’s tip and always makes the best kadi.
Serve the kadi with rang & enjoy this with phulka, laccha paratha 🫓 & rice - 7
Sukhi Sangari ~

Take boiled sangari in a bowl add salt, chili powder, haldi powder, coriander powder & amchur powder according to taste ;mix it nicely & correct the seasoning. Sprinkle some water cover it & keep aside for 1 hr

Heat mustard oil add jeera & hing then add sangari with spices & cook for 4-5 minutes till oil separates. Subzi is ready to enjoy

Note ~
Soak sangari with enough water & salt + haldi powder. Morning boil it till done.sieve it wash it & use for kadi & subzi
