Wash, rinse and soak poha for 2-3 minutes.

Mix with Turmeric powder, Red chilli powder. Set aside.

Heat oil in a pan. Add mustard seeds, cumin seeds, onions and salt. Add chopped vegetables and saute until tender.

Add poha in a pan and mix well. Cook for few minutes and finish it off with a lemon juice.

Serve with your preferred toppings like cucumber slices, sev or pomegranate kernels.
