Fresh Fig Red Velvet Modak
Made it as I went along.
Steps

Wash and peel figs. Puree them in a blender.

Heat 1 tablespoon ghee in a pan. Add fig puree, cook 2 minutes, stirring.

Add milk powder and 1 tablespoon ghee. Stir well.

Add almond powder. Cook until dough-like.

Add poppy seeds and cardamom powder. Mix.

Add a little red food colour if desired.

Add sugar. Cook, stirring, until dough forms and doesn’t stick to hands.

Grease modak moulds. Shape the mixture into modak.

Garnish with slivered pistachios and almonds.
Tips
Using ripe figs enhances the natural sweetness and texture of the modak.
