Here I come again with scrumptious coconut laddoo made with fresh coconut and strawberry ( with no artificial color ) stuffed / filled with Almond Chocolate Mawa.
It is not overly sweet. No ghee is used
It was an instant hit in my family.
Hope you too make it and enjoy with your family and friends in the 10 day long Ganesh Chaturthi Festival 🙏
Note: If you have a Modak mold you can give it the shape of Modak too.

Ingredients

  1. For the Filling
  2. 1/4 cupMilk Chocolate Chips
  3. 1/2 cupMawa (unsweetened)
  4. 10Almond Chopped
  5. For the Strawberry coconut mix
  6. 200 gmsFresh Strawberry
  7. 1.5 cupsFresh Coconut Grated
  8. 6 tbspsCondensed Milk
  9. 1 sliceBeetroot
  10. 10Cashew chopped
  11. For coating / covering laddo
  12. 1/4 cupDesiccated Coconut
  13. 1/4 cupDry toasted /roasted Desiccated Coconut
  14. As needed edible coconut oil

Steps

    For the filling preparation:
    In a non-stick pan, on low flame, dry roast the almond for a minute or so. Add in the Mawa and mix it and cook for a minute or so then add in the milk chocolate chips and put off the flame.

  2. 2

    Mix well, the chocolate will melt in the heat. Once mixed, put it on a plate lined with baking paper.

  3. 3

    Let it cool a bit for about 5 minutes or so. Apply coconut oil on your palm and shape it into balls. I got around 13 balls of approximately 9-10 gms. Put it in the fridge to cool and firm up a bit while you prepare the strawberry coconut mix. So that’s it easy to handle when you fill and make the laddoos.

    For the Strawberry coconut laddoo mix preparation:
    Puree the strawberry with a slice of Beetroot and keep aside for a while.

  5. 5

    In a pan / vessel, preferably non-stick, add in the cashew and dry roast it for a minute or so, then add in the coconut and dry roast it too along with cashew for few minutes on low flame. This will give a nice nutty flavour to the coconut. Empty it in a bowl.

    In the same pan, after the cashew and coconut is finished roasting, add in the puree and cook for 5 minutes or so till the puree thickens a bit.

  7. 7

    Add in the dry roasted coconut and cashew and mix well and continue cooking for few minutes.

  8. 8

    Add in the condensed milk, mix well and continue cooking till the mixture starts forming a lump and starts leaving the non-stick pan. If you touch the mixture it will be sticky. Put off the flame. Let it cool for a few minutes, so that you can handle the warm mixture.

    Meanwhile arrange other ingredients. Put the two desiccated coconut in individual bowls. Brush the plate with coconut oil. Keep a small bowl of water to dab on your palm when you shape the laddoos. Take out the almond chocolate mawa out of the fridge.

  10. 10

    Divide the mixute into equal parts roughy or go with the flow one by one. Take approx. 30 gms of coconut strawberry mix, enough to hold and cover the mawa balls.

  11. 11

    Flatten it and form a small bowl shape, put one mawa ball and shape it into laddooo covering it completely. Dab water on your palm as you shape it, so that it doesn’t stick.

  12. 12

    After you shape the laddoos, dunk it in the desiccated coconut bowls to cover it. I covered 5 laddoos with unroasted desiccated coconut.

  13. 13

    And covered 5 Laddoos with roasted desiccated coconut. As you make it, place one by one on a plate brushed with coconut oil. Your coconut Strawberry coconut laddoo stuffed with Almond Chocolate Mawa is ready for the Lord and your family and friends.
