A tasty dish that can be served as a main course or cut into cubes and offered as an appetizer with drinks.

Slice the zucchini and onion, then sauté them in a skillet with 1 tablespoon olive oil for about 10 minutes, seasoning with salt and pepper.

Crack the eggs into a bowl, add the heavy cream, Parmesan cheese, and mint, and whisk everything together. Add the sautéed vegetables, season with salt and pepper, and mix well.

Line a small rectangular baking dish (about 8 x 12 inches / 20 x 30 cm) with parchment paper. Pour in half of the mixture, add the American cheese slices, then pour in the rest of the mixture. Bake in a preheated oven at 400°F (200°C) for 35–40 minutes, until puffed and golden. Check doneness with a toothpick; if it comes out clean, remove from the oven and serve.
