Microgreens Daal (Lentil Curry)

An easy peasy everyday Daal or Indian Lentil Curry or Stew is one of the bestest options for mealtimes on any given day. It is the best and the cheapest source of good and essential Protein. Infact it can be made and relished each single day without getting fed up of it. That's the magic of simple and delicious comfort meal of Indian homes. Almost every single home would definitely make (Daal) and enjoy it on most of the days.

However this particular Daal that iam sharing here is an incredible one with an innovative idea by me. I have incorporated mixed Microgreens in it for a yummy change. The idea did work out and the final look and flavour profile were both so very awesome. It's a simple everyday Daal made in most of the homes with the basic Indian condiments. But when this was given a twist with the healthy Microgreens, it was an excellent source of Protein and Vitamins. You can use any Microgreen you want but I have used a mix of White Radish, Pink Radish and Fenugreek Microgreens. You would definitely love it once you get to taste it. I have already made it 3-4 times until now and each time, it just made me fall in love with it. A refreshing and a delicious Daal that goes well with both Rotis and Rice.

Ingredients

20-25 minutes
4-5 servings
  1. 200 gmRed Lentils or Masoor Daal
  2. 2 clovesminced Garlic
  3. 1 inchgrated Ginger
  4. 2chopped Green Chillies
  5. 2finely chopped Tomatoes
  6. 1finely chopped Onion
  7. 1 tspRed Chilli powder
  8. 1/2 tspTurmeric powder
  9. 1 tspCoriander powder
  10. 1/2 tspCumin powder
  11. 100 gmmixed Microgreens (White Radish, Red Radish and Fenugreek)
  12. 1 tspSalt
  13. 1 cup(about 240ml) Water
  14. 2 tbspOil

Steps

20-25 minutes
  1. 1

    Rinse red lentils and set aside. Also get the microgreens ready after rinsing them well. Set aside until use.

    Heat oil in a pot, saute onion until translucent.

  3. 3

    Add garlic, ginger and green chillies, cook for 1 minute.

  4. 4

    Stir in tomatoes and cook until soft.

    Add all powdered spices, mix well.

  6. 6

    Add lentils and 1 cup water, bring to a boil.

  7. 7

    Simmer until lentils are 80% cooked.

    Add microgreens and salt, cook until lentils are soft and done.

    Serve hot right away at mealtimes alongside Rotis and Rice. Enjoy!

Tips

Add microgreens towards the end of cooking to retain their freshness and nutrients.
