First ready paneer and all vegetables. Cut paneer into strips. Chop vegetables into strip cuts. Boil corn and peas. Ready all masalas. Grate 2 tomatoes and chop 1 tomato. Grate ginger and chop green chillies and coriander stems.

In 1tbsp oil and 1 tsp butter add in potato. After 2 minutes add carrot, beans,some salt and cook on high flame. Transfer to a plate. Now saute boiled corn and peas and some salt and saute on high flame. Lastly,add cabbage and capsicum and saute on high flame for 1 minute.Keep all the vegetables except potato crunchy. Transfer to a plate.

Ready all dry masalas.

In the kadhai add some butter and oil and saute the paneer with little salt to get golden marks on it. Keep paneer in a plate. Do not overcook the paneer, else it will get rubbery and hard.

Now in the kadhai take some more oil and butter. Add in jira. When it crackles, add in ginger, green chillies and coriander stems. Add in 1 tomato strip cut.

Saute for 1 minute on medium flame. Add in salt, haldi, chilli powder and dhanajira. Saute a while and add in 2 tomatoes grated.

Stir and cook until the oil separates. Now add in tomato sauce and garam masala. Mix. Now add in sauted crunchy vegetables.

Also add in the sauted paneer. Mix gently.

Lastly, add in pepper powder and mix. Serve hot immediately to retain the crunchy texture if the vegetables. I also made aloo kulcha and prepared a special dinner.

Garnish with coriander and serve with roti, paratha, fulka, naan, puri Or kulcha. Here I have served Paneer Jalfrezi with Aloo Kulcha. Enjoy restaurant style combo with a smile with family and friends. Happy Cooking😊!!
