Sev Tameta Nu Shaak

First heat a pan add some ghee and oil in it and mix it. Once it becomes hot, add a cinnamon stick, some jeera, mustard seeds, a bay leaf and a dried red chilli.

Once they starts crackling, add a pinch of hing; then add chopped onion and green chillies and give it a mix. Fry for 2 minutes by adding some salt. Now add some ginger-garlic paste and mix it. Fry the masala for about 5 minutes.

Now add the tomato paste in it and give it a mix. Now in a small bowl add the dry masalas like turmeric powder, coriander powder, cumin powder, salt, red chilli powder and a tsp of sugar. Add little water and mix everything well and make a paste as shown below in the image.

Now pour this into the masala and combine it well with the masala. Let it fry for about 5 minutes on a low flame.

Then add 2 tbsp of whisked curd and mix it well with the masala. Now fry the masala on a low flame until oil starts releasing from the masala.

Then add 2 cups of hot water in it. Mix it well. Check the salt consistency. Now cover the pan and let the curry cook for about 7 minutes on a low flame.

Then add garam masala powder and chopped coriander leaves and mix it. Finally add the sev in it and mix them gently. Now let it simmer for about 2 minutes. Then switch off the flame.

Garnish it with some more chopped coriander. Sev tameta nu shaak is now ready to serve. Serve it hot with some phulkas.
Tips
After putting the sev just mix it well with the curry. Then switch off the flame. Don't cook it further or else the sev/gathiya will melt completely and will get mixed with the curry.
