Steps

Cook rice noodles according to package instructions with some salt added. Drain and set aside until use.

Heat a tablespoon of olive oil in a pan. Scramble the eggs with some salt and pepper added and set aside.

Add remaining oil to the same pan. Saute ginger and garlic until fragrant.

Add sliced onions and cook until translucent.

Stir in curry powder, coriander, cumin, cayenne or paprika, black pepper, white pepper and salt. Mix well. Salt and other spices need to be used as per one's own choice.

Add all bell peppers, bean sprouts, cabbage, mushrooms and spring onions. Stir-fry until vegetables are crisp-tender. Do not rush about it. Add the sauce and mix well. Cook for 3-4 minutes more.

Add boiled noodles and scrambled eggs. Toss everything together.

Finish with lemon juice, chopped cilantro and spring onions. Serve hot. Enjoy!
Tips
For extra flavour, you can adjust the spices according to your taste preferences and add more Vegetables if desired.
