First, wash the mung beans thoroughly and soak them in water for 4-5 hours. Once the mung beans swell, drain the water and grind them in a mixer with ginger, green chilies, and cumin.

Cut all the mentioned vegetables finely and grate the cheese.

Heat butter/cooking oil in a pan, then add finely chopped green chilies and ginger. Add finely chopped onions and saute until golden brown. Next, add finely chopped carrots.

After 2 minutes, add the chopped tomatoes and sauté. Now, add the bell pepper pieces as well.

Cook everything for 2 to 3 minutes, then add the mentioned spices and salt, tossing well. Our filling masala is ready.

Now heat a non-stick pan, lightly grease it with ghee or cooking oil, and sprinkle some water on it. Doing this will make the pan smooth. Over medium heat, take two ladlefuls of batter and spread it on the pan as shown.Apply a little ghee on top.

Lightly roast the other side as well, creating as many mung bean roundels as needed. Now, assemble the vegetable masala, grated cheese, and green coriander leaves as shown in the picture.

We will make rolls of it and then prepare them by cutting them diagonally like spring rolls.
