BHANDARE WALI KADDU ki SABJI
Steps

Peel kaddu, cut into cubes, wash it, strain it, keep aside.

Take a wok, add oil, heat it. In goes tejpatta, methi, saunf, kalonji & dry red chilli, saute it for 30 sec.

Add in green chilli & ginger, saute it until light brown.

Now add kaddu pcs, stir fry it for a minute.

In goes salt & haldi powder, mix it well, stir fry it for a minute.

Cook it covered on low flame until kaddu is almost cooked, stir in between.

Open the lid, increase the flame, add tomato, mix it well. Lower the flame, cook it covered until tomato turns half mushy.

Open the lid, add kashmiri red chilli powder, mix it well.

Increase the flame, add dhania patta & sugar, stir it for 30 sec. Cover it.

Turn off the flame, open the lid after 5 minutes, take out in a serving bowl, garnish it with a dhania sprig. Can be paired with Puri...
Tips
U can use 1/2 tsp amchur powder in place of tomato.
