Ingredients

30 minutes
4 people
  1. 500 gchicken thighs boneless with or without skin on
  2. 1/2 tbspsoy sauce
  3. 1/2 tbspsake
  4. 1 cuppotato starch - for coating the chicken
  5. 2 cupsrice brand oil
  6. Leek sauce:
  7. 1/2leek
  8. 100 mlsoy sauce
  9. 1 tbspsake
  10. 30 mlrice vinegar
  11. 1 tbspsugar
  12. 1/2 tbsprice brand oil
  13. 1red chilli, without seeds, roughly chopped

Steps

30 minutes
  1. 1

    Cut the chicken in large pieces and mix with soy sauce and sake. Marinate for 5 minutes.

    To make leek sauce: pierce the leek randomly with a sharp knife and then chop finely.

    Mix soy sauce, sake, rice vinegar and sugar together in a bowl.

    Heat the oil in a frying pan and lightly sauté the minced leek and red chilli. Then add the sauce to the pan, stirring constantly. When the sugar has dissolved take off the heat and set aside.

    Remove the chicken from the marinade and coat thoroughly with potato starch.

    For the best results, the chicken should be at room temperature before deep frying. Deep fry the chicken at a medium high temperature (170- 180ºC), making sure each piece is completely immersed in the oil so that it cooks on the inside while remaining crispy on the outside.

    Remove when golden brown, drain. Place on a serving plate and cover with the leek sauce.
