Place the pho noodles in a large bowl and gently separate the strands by hand. Add 1 tablespoon of seasoning powder and a little MSG, then mix well. Finally, add the tapioca starch and toss until the noodles are evenly coated.

If your beef is pre-sliced, simply marinate it with 1 tablespoon MSG, ground black pepper, 1 tablespoon soy sauce, and a little cooking oil. Let it chill in the refrigerator for 15 minutes.

Wash the Chinese broccoli and cut into 3-4 inch (7-10 cm) pieces. Soak the dried shiitake mushrooms in water, then rinse clean.

Heat oil in a small pot. Once hot, add portions of the coated pho noodles, shaping them into rounds to fit your plate. Fry until both sides are golden and crispy. Next, stir-fry the beef with the greens and mushrooms. Add a little water to create a sauce, and stir in 3 more tablespoons of soy sauce.
