A simple and easy day to day curry recipe made with sweet pumpkin slices. It is perhaps one of the most frequently made north indian curry in many indians house holds for day to day lunch or dinner.
Steps

Peel, wash and cut pumpkin in a cubes.

Heat oil in a kadai. Add mustard seeds, asafoetida,bay leaf, cloves, Fenugreek seeds,curry leaves. Saute it well. Add chopped green chilli and curry leaves. Turns aromatic.

Add cut pumpkin. Saute it for 2 minutes. Add turmeric powder and salt. Add 1/4 cup of water. Cover the lid.

Simmer for 10 minutes. Stir occasionally. Add red chilli powder, cumin coriander powder. Mix it well. Almost cooked.

Add lemon juice and sugar. Mix it well. Cook for 5 minutes. Sprinkle chopped green coriander.

Serve hot sweet and sour pumpkin sabji with Roti or paratha.
