Start yeast action by placing yeast in 1/4 cup warm water to which 1 teaspoon of sugar has been added.

Scald 2 cups milk and add shortening to melt. Set aside to cool.

In large bowl mix flour, sugar and salt. Add lukewarm milk and shortening mixture, eggs well beaten and yeast mixture.

Mix all ingredients together adding just enough flour so that dough is not sticky. Cover and let rise at room temperature for 1 hour or until double.

Separate dough into 32 rolls. I use a kitchen scale to weigh the dough into four equal pieces and divide each by eight.

Use a rolling pin to roll out each roll.

Add sliced pepperoni and then roll up and seal.

Brush rolls lightly with beaten egg and then let rise until double.

Bake at 350 for 15 minutes.
