Steps

Wash the Chibad well in water, then cut into long pieces.

Heat oil in a kadhai. Add mustard seeds and let them crackle.

Add asafoetida, cumin powder, and curry leaves. Stir briefly.

Add chopped Chibad and sauté for 1 minute.

Add coconut powder, red chilli powder, crushed peanuts, turmeric powder, kala masala, and salt. Mix well.

Sauté on low heat for 1 minute.

Add tamarind paste and jaggery. Mix well.

Pour in 1 cup hot water. Cook for 2 minutes or until Chibad is soft.

Serve hot with roti or chapati.
Tips
You can also make this sabji as a stuffed version, similar to Bharli Wangi (stuffed brinjal).
