#CA2025 Butter Pav Bhaji is favourite dish to anyone,and you can eat as morning breakfast,or lunch or evening.
Steps

Wash and chop all vegetables. Pressure cook cabbage, carrot, potatoes, peas, cauliflower, and beetroot until soft.

Cool the vegetables, then mash them with a pav bhaji masher.

Heat a pan, add 1 tablespoon oil and 2 tablespoons butter. Sauté chopped garlic, then add tomatoes and beetroot. Sauté for 2 minutes.

Add 1/2 cup water and 1 tablespoon red chilli powder. Cook for 1 minute.

Add the mashed vegetables and mix well.

Add pav bhaji masala, turmeric, salt, and 1/2 cup butter. Mash and mix thoroughly.

Cook on low heat for 5 minutes, stirring often.

Add 1 tablespoon butter and chopped coriander. Mix well.

In another pan, heat butter and roast pav (bread rolls) until golden.

Serve hot bhaji with buttered pav. Garnish with coriander, spring onion, and extra butter. Serve with lemon wedges.
Tips
Adding beetroot gives the bhaji a vibrant red color.
