1.5 cupsricotta, or garlic ricotta
1 cgrated Parmesan
3 cshredded mozzarella
1/2 cfresh parsley
1/4 cfresh basil
1Egg
1 lbground lamb
1 tbspanchovy paste
2 tbspbutter
1diced shallot
1/2 headminced garlic
1lg or 2 small carrots small diced- I use a sml white and sml purple to help remove acidity
2-3 tbsptomato paste
44 ozpassata or canned tomatoes
1/2 cred wine
2bay leaves
6 springsthyme
1finger length of rosemary
