Leave the figs whole or cut them in half. Boil them with salt for 5-7 minutes once the water comes to a boil. Remove the figs, rinse with cold water, and drain well.

Cut the lemongrass into sections and lightly crush them. Slice the red chili and fresh chili peppers.

Add the figs, vegetarian fish sauce, soy sauce, brown sugar, lemongrass, and chili peppers to a pot. Add just enough water to barely cover the figs.

Simmer over low heat for 30 minutes. Gently shake the pot instead of stirring to keep the figs from breaking apart.

Turn off the heat and let cool. Then simmer for another 30 minutes, still only gently shaking the pot.
