Beef Ramen with Zucchini Noodles and Mushrooms
A recipe so my son can eat what he sees in his cartoons and start enjoying more vegetables.

Start by making a broth with the seared beef steak, chopped vegetables, and water. In a separate pot, boil two eggs and set aside.

While the broth is cooking, prepare the optional zucchini noodles. Use a spiralizer or vegetable sharpener to cut the zucchini. Lightly sauté the noodles in a skillet and set aside for serving.

Add the remaining zucchini to the broth. Also add the mushrooms and the ramen noodles with their beef-flavored seasoning packet.

Season with creamy soy sauce or any soy sauce you have. Once the noodles and beef are cooked, assemble the bowl: first add the broth, then the noodles, mushrooms, sliced beef, peeled and halved eggs, seeds, and chopped green onions.
