Ingredients

  • 1 kglamb knuckles
  • 1brown onion diced
  • 500 ggreen beans finely cut on the diagonal
  • 2 Tbspgarlic and ginger
  • 1 Tbspcoriander seeds crushed
  • 1green chilli finely chopped
  • 1 tspturmeric
  • 1 punnetbutton mushrooms
  • 2 Tbspolive oil
  • 3potatoes cubed (omit for low carb)
  • DashWorcestershire sauce

Steps

  1. 1

    Add oil to a large pot and heat on high

  2. 2

    Brown meat in small batches and set aside

  3. 3

    Add onions, spices, mushrooms, garlic and ginger and braise until fragrant (about 10 minutes)

  4. 4

    Return meat to the pot and mix well

  5. 5

    Turn heat down to medium and braise for about an hour with the lid on

  6. 6

    Add potatoes if using and greens beans and simmer for a further 30-40 minutes until the potatoes are done and the meat is deliciously tender

  7. 7

    Season to taste with salt, pepper and a dash of Worcestershire sauce

  8. 8

    Serve with choice of starch or cauli-rice, Enjoy!
