Soak the chia seeds in the coconut yogurt. You can also use any unsweetened plant-based milk. Ideally, let it sit overnight or for a few hours. Add the berries or homemade berry jam. Set aside.

Beat the egg with the stevia.

Add the baking powder and flours to the mixture. Add the egg and mix well.

Depending on the size of the egg and the liquid used, you may need to add an extra tablespoon of flour.

Drop spoonfuls of the batter onto a greased, hot skillet. Cover and cook until you can flip them. Cook on both sides and enjoy.
