  1. 14 ozsalted cod, already soaked and desalted (about 400 grams)
  2. 4 tablespoonsTaggiasca olives
  3. 1garlic clove
  4. 1large bunch fresh parsley
  5. as neededExtra-virgin olive oil,
  6. 7 ozspaghetti (about 200 grams)
  7. 1 2/3 cupswater (400 ml)

    Rinse the salted cod well, remove the skin, and cut it into 3/4-inch cubes (about 2x2 cm). Meanwhile, sauté the garlic in extra-virgin olive oil.

    Sauté the cod in the oil for 2 minutes, then add the olives and cook for 1 more minute. Set the sauce aside. In the same pan, add the water and spaghetti.

    When the spaghetti is almost cooked, add the sauce and plenty of chopped parsley.
