Blend the eggs with the spinach (make sure the spinach is washed and dried with paper towels to avoid extra moisture).

Add the semolina flour and knead for 10 to 15 minutes.

Let the dough rest for 30 minutes covered with a kitchen towel.

Roll out the dough very thin using a pasta machine or rolling pin, dusting with semolina flour to prevent sticking.

Fold the dough in half, then fold again and roll up. Slice into noodles.

Drop the noodles into boiling water and cook for about 5 minutes. Check for doneness.
