A traditional dish from my area: pasta frittata with smoked scamorza cheese and salami, often served with tortano bread and roasted artichokes. Perfect for Holy Saturday gatherings.

Cook the bucatini for 1 minute less than the package directions. Drain well and toss with a little olive oil.

Beat the eggs with salt and pepper. Add the Parmesan, diced salami, and diced scamorza cheese.

Add the pasta to the egg mixture and mix well.

Heat olive oil and the garlic clove in a large skillet, then remove the garlic.

Pour in the pasta mixture, cover, and cook over low heat for 10 minutes.

Flip the frittata and brown the other side.
