Ingredients

30 minutes
For the whole family
  1. 1.1 lbschicken giblets
  2. 3.5 ozsliced mature ginger
  3. 1sliced onion
  4. 2sliced chili peppers
  5. 1 cupdried wood ear mushrooms, soaked (crunchier than fresh)
  6. 2 stalksgreen onions, cut into pieces
  7. 1 tablespoonminced garlic
  8. .......seasonings
  9. 1/2 tablespoonfish sauce
  10. 1 tablespoonsoy sauce
  11. 1/2 teaspoonpalm sugar
  12. 1 teaspoongranulated sugar
  13. 1 teaspoonsalt
  14. 1/2 teaspoonground pepper
  15. 4 tablespoonsoyster sauce
  16. 1capful Chinese cooking wine

  1. 1

    Clean the chicken giblets with salt or alum until thoroughly clean. Rinse the gizzards until they are no longer slimy.

  2. 2

    Cut the liver into two parts. Halve the heart without cutting through and squeeze out the blood. Cut the gizzards into two parts and slice into strips.

  3. 3

    Heat a wok and add oil over medium heat. Once hot, add garlic and sliced ginger, stir-frying until fragrant. Add the wood ear mushrooms and stir-fry, then push to the side of the wok.

  4. 4

    Increase the heat to high and add the giblets. Add salt and stir-fry to combine.

  5. 5

    Season with fish sauce, soy sauce, palm sugar, granulated sugar, and ground pepper. Pour the Chinese cooking wine along the side of the wok and stir-fry until cooked through.

  6. 6

    Add the onion and chili peppers, stir-fry until cooked. Add the green onions, turn off the heat, and stir to combine. Serve hot on a plate.
