Ingredients

2 people
  1. 1 bunchspinach (palak), washed & chopped
  2. 1 cupcurd (slightly sour works best)
  3. 1small onion (optional), finely chopped
  4. 2garlic cloves, chopped
  5. 1green chili (optional)
  6. 1/2 tspmustard seeds
  7. 1/2 tspcumin seeds
  8. 1–2 tbsp oil
  9. 1/4 tspturmeric powder
  10. Salt to taste
  11. as neededWater

Steps

20 mins
  1. 1

    Heat oil → add mustard seeds + cumin seeds
    Once they splutter, add garlic, chili, onion
    Sauté till soft
    Add chopped spinach + turmeric + salt
    Cook till spinach wilts (5–7 mins)

  2. 2

    Whisk curd well (important to avoid curdling)
    Add a little water to thin it slightly

  3. 3

    Lower the flame completely
    Add curd slowly while stirring continuously
    Do not boil on high heat (it may split)

  4. 4

    Cook on low flame for 2–3 mins
    Adjust salt and consistency
