Steps

Heat oil → add mustard seeds + cumin seeds
Once they splutter, add garlic, chili, onion
Sauté till soft
Add chopped spinach + turmeric + salt
Cook till spinach wilts (5–7 mins) - 2
Whisk curd well (important to avoid curdling)
Add a little water to thin it slightly - 3
Lower the flame completely
Add curd slowly while stirring continuously
Do not boil on high heat (it may split) - 4
Cook on low flame for 2–3 mins
Adjust salt and consistency
