But I assure you that this is a very tasty and crunchy recipe.
My mother always made Bitter gourd like this for us.
These can be stored in airtight container for a week and can be enjoyed as a side dish with dal rice or as a teatime snack.

These can be stored in airtight container for a week and can be enjoyed as a side dish with dal rice or as a teatime snack.
Steps

Wash and lightly peel the karelas.

Slice the karelas as thinly as possible. Remove the big seeds in the slices.

Mix in 2 tsp salt and rest for 30 minutes.

Squeeze out the bitter water and put the karela slices into plain water. Drain the slices from the plain water.After 2-3 minutes pat dry the slices and keep on a clean cloth for 3 minutes.

Take the slices in a mixing bowl and mix in cornflour.

Mix well to coat all the slices with cornflour. Heat oil for deep fry. Add in slices one by one in small batches for deep fry. Fry on medium gas.

After 3 minutes or once the chips are crispy, drain out the chips from oil. Place on absorbent paper.

Ready the dry masalas and mix well.

Sprinkle masala on the fried chips. Mix. On cooling, the Karela Chips will get crispier.

Tips
Use fresh karelas.
Instead of cornflour,besan or rice flour can be used.
These can be airfried too
