Lau, Paneer diye Chola’r Dal (Chana Dal with Louki/ Bottle Gourd and Paneer/Cottage Cheese)

Cook the overnight soaked with little water in a pressure cooker with 2 whistles or until softened depending upon your pressure cooker.

Cut the paneer into cubes and fry it and soak it in hot water.

Heat little oil. Slice and chop the coconut and fry it along with cashews and raisins and keep it aside to add later on.

Peel and cut the louki/bottle gourd into small pieces /cubes. Peel ginger and crush and make it into a paste with 1-2 green chillies depending upon the spice level you want.

In the same oil, add the whole spices- cumin seeds, cinnamon, whole dry chilli and Bay leaf and once it crackles add the ginger chilli paste. Saute and then add the Louki, add turmeric, cumin powder and mix it well, cover and cook for about 10-15 minutes till the Louki softens a bit.

Then add the pressure cooked Chana dal. Add salt and enough hot water and cook it further for some time.

Add the fried Cashew, raisins and coconut. After sometime add the fried paneer too and cook. Adjust water accordingly to the consistency of the dal needed and louki to cook well.

Add in the slit 2-3 green chillies, Garam Masala, sugar and ghee and cook for about 5-10 minutes, check the salt and add if needed.

Once done, serve hot with Hot Fried Luchi. Enjoy !
