In a bowl, mix grated lauki, rava, and dahi

Add turmeric, red chilli powder, coriander powder, hing and salt.

Mix well and let it rest for 10–15 minutes.

Add a little water if the batter is too thick. It should be like thick cake batter.Heat oil in a pan, add mustard seeds, sesame seeds, and curry leaves.

Just before cooking, add eno or baking soda and mix gently.

Heat oil in a pan, add mustard seeds, sesame seeds, and curry leaves.

Pour the batter into the same pan (or greased pan).

Cover and cook on low flame for 15–20 minutes until the bottom is golden.

Flip carefully and cook the other side.

Serve hot with green chutney or ketchup 😋
Tips
Grate lauki well, keep the batter thick, and always cook on low flame for a perfectly soft yet crispy handva.
