Heat oil in pan

Add onions, cook till soft

Add tomatoes, cook till mushy

Add curry masala + salt

Add a little water to form gravy

Add fish pieces

Cook 5–6 mins (don’t over-stir)

Finish with lemon
Tips
Don’t overcook the fish → it becomes mushy very fast
Add fish only after gravy is ready → not at the beginning
Stir gently → basa breaks easily
If gravy feels watery → cook uncovered for a few minutes
Add a little extra lemon at the end → boosts flavor a lot
Slight oil separation on top = masala is properly cooked
