Soak mung dal overnight. Drain and grind with 3 green chillies, ginger, and optional greens, adding water as needed.

Heat 1 tbsp oil in a pan. Sauté onion and chopped green chillies for 1 min. Add carrot, green pepper, and salt. Cook for 1 min. Add paneer, kitchen king masala, chilli powder, and garam masala. Mix and cook for 1 min. Turn off heat.

Heat a nonstick sandwich pan with a lid. Brush both sides with oil.

Mix eno into the batter. Spread a layer of batter in the pan. Add some vegetable and paneer stuffing on top. Cover with more batter.

Close the lid and cook on medium heat until crispy on both sides, flipping the pan as needed. Make as soft or crispy as you like.

Variation: You may also make dosa or chilla with the topping instead.
Tips
Ensure to use a nonstick pan; otherwise, it will stick badly.
