First, ready all the ingredients. Keep whipping cream chilled in fridge until the rest of the process is going on. Sieve the besan. Measure all ingredients as shown (not heaped)

For Besan Laddoo Mixture: In an iron kadhai take ghee, when warm add in sieved besan and roast on slow gas. When aromatic and nice reddish in colour add in sugar powder and cardomom powder and mix.

Now add in milk about 30 ml, in batches. Use rest of the milk later. Mix and transfer the Besan Laddoo Mixture into a clean plate. Cool it completely.

For Ice-cream: Whip the chilled cream to a soft peak consistency. Now add in the cooled Besan Laddoo Mixture.

Mix gently. Now add in the remaining milk and mix.

Now take a round sphere ice making mould. Put chopped badam-pista in the plastic base of the mould part without holes. Close the mould with the silicon holed half.

Fill the Besan Laddoo Mixture into a piping bag. Pipe it into the mould carefully. I also set some in candy moulds too.

Freeze for 24 hours as the besan will not set quickly. Open the mould and take out the Besan Laddoo Ice-cream carefully.
