  3. 1 1/2 cupsyogurt (whisked)
  4. 1 1/2 tbspfinely chopped ginger
  5. 2green chilies (finely chopped)
  6. 1/2 cupgrated carrot
  7. For Tempering:
  8. 2 tbspghee
  9. 3dry red chilies
  10. 12-15cashew nuts
  11. 1 tbsppeanuts
  12. 1 tbspmustard seeds
  13. 1 tbspwhole white urad dal
  14. 1/4 tspasafoetida (hing)
  15. 2 sprigscurry leaves
  16. Additional Ingredients:
  17. 1 tbspmilk (optional)
  18. Salt to taste
  19. 2 tbspfreshly chopped coriander leaves
  20. For Topping (Optional):
  21. Fried cashews
  22. Peanuts
  23. Pomegranate pearls

Total Time: 25–30 minutes
  1. 1

    ▪︎ Prepare the Base:

    Cook the ponni rice until soft and slightly mushy. Allow it to cool completely.

    Transfer to a large bowl and gently mash for a creamy texture.

    ▪︎ Mix the Curd Base:

    Add whisked yogurt, chopped ginger, green chilies, and grated carrot.

    ▪︎ Prepare the Tempering:

    Heat ghee in a tadka pan.

    Fry cashews, peanuts, and dry red chilies until golden. Remove and set aside.

    In the same pan, add mustard seeds and let them splutter.

    Add urad dal and roast until lightly golden.

    Switch off the flame and immediately add asafoetida and curry leaves.

    Let the tempering cool slightly before adding it to the curd rice mixture.
