Soak urad dal in water for 8 hours. Wash and grind to a smooth paste. Add 1 tsp salt to the dal paste. Roughly grind 1 tsp jeera and black pepper, mix in.

Heat oil in a pan. With wet fingers, shape small vadas and deep fry until golden. Remove vadas and soak in buttermilk with 1 tsp salt for at least 2 hours.

Gently squeeze vadas and arrange in a flat vessel. Mix curd with salt and spread over vadas.

Sprinkle red chilli powder and roasted jeera powder. Drizzle sweet tamarind chutney.

Serve chilled.
Tips
For extra soft vadas, ensure the urad dal is ground to a smooth paste and soak them in buttermilk for the recommended time.
