Ingredients: 1/2 package rice noodles; 1 large onion sliced; 2 c shredded cabbage; 1 tomato chopped; 1 habanero pepper chopped fine; 1 tbsp fenugreek; 4 cloves garlic minced; 1/2 c water; Salt and pepper to taste; 2 c fresh water leaf or spinach; 1 tbsp malt vinegar; 3 tbsp dark soy sauce; 1 tsp oyster sauce; 2-3 tbsp fish sauce

Rice noodles are one of a definite favorite of mine. Going to the strip district in Pittsburgh Pa, where I grew up, especially the Asian stores was my absolute favorite shopping time. 2 must haves from there was rice noodles and fish sauce ( among many other delicious things 🤭) this stir fry is just so very flavorful and satisfying so give this a try and you will see how delicious to you as well….

1/2 packagerice noodles
1large onion sliced
2 cshredded cabbage
1tomato chopped
1habanero pepper chopped fine
1 tbspfenugreek
4 clovesgarlic minced
1/2 cwater
Salt and pepper to taste
2 cfresh water leaf or spinach
1 tbspmalt vinegar
3 tbspdark soy sauce
1 tspoyster sauce
2-3 tbspfish sauce

Prepare onion, habanero, water leaf and cabbage…

In a frying pan on medium heat add the sesame oil and the fenugreek, sesame seeds,habanero and garlic. Fry until fragrant.

Add the onions, cabbage and water leaf with 1/2c water and fry these until the water has evaporated then add chopped tomato. Add the already cooked rice noodles. Mine were frozen, when I boil the whole package I freeze half for another time. This is the other time 🤭

Add the soy and oyster sauces and malt vinegar stir around. Taste to see how things are coming along. Now add the fish sauce 2 tbsp then taste and if good there your done if not add the rest and taste. Garnish with sesame seeds and parsley. Make this day a day to remember🥂

Tips

Freezing rice noodles is a great idea when the need for a quick fix is on the mind. They freeze very well and when recooked are exactly the same as cooking the first time. They’re not mushy but perfect 👌
