Potato Bajji or Aloo Pakoras or Fritters are the famous snack at Tea-time in South India. These Aloo ke Bhajiye or Potato Bajji are the perfect melt-in-mouth goodies that can be served for evening snack at Tea-time or Shaam Ki Chai.
Potato slices coated in luscious Gram Flour batter and then deep-fried to perfection for that crisp and crunchy texture on the outside and soft Potato slices on the inside.
Serve them alongside any Dip or Chutney of your choice.
The Potatoes can be thinly sliced or given an oblong shape depending on one's own choice. The shape of the Potatoes also matters here. If they are round, we get nice round shapes and if they are long and not perfectly round, then an oblong shape is the right choice. Whatever may be the shape, the taste and texture is what ultimately matters the most.
Come Ramadan or even Monsoon, the big and the small roadside Eateries and Cafes are loaded with these Bajji. These are sold like hotcakes. That's the craze of these Bajji or Fritters or Pakoras.

Steps
- 1
Make a smooth semi-thick yet a fluffy batter with all the ingredients mentioned. Mix well and keep aside for a good 20 minutes or so. This is a must. The standing time given is enough for fluffy and soft bajji
- 2
Deep fry in hot oil on a medium-high heat dipping each slice in the batter and sliding into the kadai carefully. See to it that they are coated well with the batter. Cook until golden brown and done.
- 3
Enjoy these lip-smacking fritters with a hot cup of chai or coffee when it's pouring outside or on any day especially a holiday or as a weekend special snack. The weather plus these bajji will definitely make your day. Relish!
- 4
Serve them piping hot with any chutney of your choice. Enjoy!
