Jamaican Meatloaf with Peppers and Banana Topping

I have found that meatloaf is almost as easy as cooking in the crockpot. Meal prep is easy, and all the magic happens in the oven. I just like finding different flavors to keep it interesting!

Preheat oven to 350°. In a very large bowl, combine the pork, beef, carrot, onion, panko, eggs, coffee, Worcestershire, and 1 teaspoon each salt and pepper. Put the mixture in a loaf pan and bake for one hour.

For the topping, melt the butter in a large skillet over medium high heat. Add the banana slices and cook 2-3 minutes on each side until caramelized. Remove bananas from the skillet.

Add 1 tablespoon olive oil to the skillet. Add the peppers and cook 4-5 minutes until browned. Add olives, brown sugar, zest, juice, and red pepper. Cook and stir until sugar dissolves. Stir in caramelized bananas. Cut and serve meatloaf with topping on each slice. Enjoy!
