Easy methi paratha I made by cooking methi leaves which removes bitterness of the methi. Try it out & make healthy paratha for breakfast, Or lunch.
Steps

Firstly wash methi leaves and coriander leaves with water well. Then pat dry them on news paper so that no moisture will remain. Now chop them well. Keep it aside.

Lets make green paste. In a mixer jar add green chili + garlic + ginger +coriander stems.Grind into mixer jar and fine green paste is ready.

Heat 1 tsp oil into pan. Then add chopped methi + chopped coriander into pan. Stir well.add green paste. Then cook for about 5-7 min. It shrinks. Keep it aside to cool down.

Now take a wide pot. Add cooled & cooked methi into it. Add all. Spices, curd + potato mashed into it. Crumble & mix all ingredients well. Then add wheat flour into the mixture. Add wheat flour till it makes like a roti dough. Knead it well. Add 1 tsp oil. Cover and keep aside for 10 min.

After 10 min. knead the paratha dough well. Make equal sized balls. Roll it on platform like small poori.

Apply oil all around over rolled small paratha. make fold to make its half. Again apply oil and make fold. It's like small triangle shape. Then roll triangle shaped into round thin paratha.

Heat tawa well. Place rolled paratha over tawa. Roast well from both sides applying oil. Roast paratha well until brown spot appears. Once it's done, take it off from tawa. Our tasty methi paratha is ready. Serve with curd, chutney or achar.
