Polenta

Polenta is my new rice/roti/pasta substitute. I eat it with meat sauce as in this recipe or with curry (rice/roti substitute). It's easy to make and can be bland unless you have something delicious to go with it. If you are going to eat polenta by itself, boil the water with herbs or chicken broth instead of water so that it has more flavor.

Bring the 6 cups of water to boil.

Add the salt to the boiling water and stir.

When the water is boiling add in the cornmeal to the water, whisking it in slowly. If the whisking slows down the cormeal will form lumps. Reduce the heat to low.

Keep stirring till the cornmeal thickens.

Stir in the butter and turn off the heat.

Optional: If you want to make different shapes, put foil onto a six inch baking pan and put the polenta in. Once it has set cut out the shapes and serve as in the picture with a spicy side.
