Cannellini Bean Alfredo pasta

Alfredo Sauce is the yummiest thing ever that man created ... but too much of it is not always the healthiest ... that's why I like variations like this one. A yummy vegan recipe if you have had a week or weekend of feasting is vital. A few simple ingredients and this dish is done. Perfect dinner meal that is very filling. Add some garlic bread, maybe even a salad and everyone will be stuffed
Make this dish and don't mention the secret ingredient - the cannellini beans! They will be stunned for sure :)

Ingredients

  1. 1 packetfettuccine of
  2. 2 canscannellini beans of , drained
  3. 1 bunchspinach of cut into ribbons
  4. 5button mushrooms sliced
  5. 1garlic mashed
  6. 1onion medium chopped
  7. to tasteSalt Pepper and
  8. Oil

Steps

  1. 1

    Empty the two cans of cannelini beans into a pot, add a 1.5 cups of water and bring it to a boil. You want the beans really soft and mushable (if that's a word haha)

    Cook the fettuccine according to the packet instructions

  3. 3

    In a frying pan, add the sliced mushrooms to some oil and allow it cook. Once done, set aside

  4. 4

    In a bigger pan, saute the onions and mashed garlic in some oil. Once the onions have softened add the chopped spinach, season with salt and pepper and cook till the spinach has wilted

  5. 5

    Add a cup or two of the cooked cannellini beans and start mashing it to a paste. Continue adding all the beans and mash away. Mash until it is a smooth sauce. Finally add the mushrooms, and give it all a good stir

  6. 6

    Place the cooked pasta in a bowl, and pour the sauce all over it. Serve right away!
