I didn’t grow up with meatloaf. There were probably four times, at most, it was served to me during my childhood. My introduction to the dish really came in college, where my cafeteria sometimes produced a surprisingly decent turkey meatloaf with arugula in it. So when I crave meatloaf now, I’m usually not thinking of the normal stuff.
I knew exactly how I wanted to make this from the instant the craving hit, and it turned out exactly as planned. I might spice it up even more next time, but it’s very tasty as it is.

Ingredients

  1. 1 lbground chicken
  2. 1/2 lbpork sausage
  3. 10 ozspinach frozen , thawed with excess moisture squeezed out
  4. 1onion small , diced
  5. 3 clovesgarlic , minced
  6. 1/2 cupbreadcrumbs
  7. 1 tspsalt
  8. 1 tspblack pepper
  9. 1 tbsppaprika
  10. 2eggs

    Preheat oven to 350 ºF. Place all the ingredients in a large bowl and mix thoroughly, using your hands if desired.

  2. 2

    When everything is evenly incorporated, transfer the mixture onto an ungreased baking sheet and form it into a loaf. For easier clean-up, line your baking sheet with foil.

  3. 3

    Bake for 1 hour, then allow the meatloaf to rest for 10 minutes before slicing and serving.
