1\. In a heavy bottom pan, add the sugar and grated carrots and cook on low heat for 7 min or until the sugar melts, stirring occasionally.

2\. On medium heat continue to cook this mixture until the color turns deep orange and becomes thick.(about 10 min)

3\. Lower the flame, add the ghee and cook for another 5 to 7 min or until the carrots are nice and soft. Remove from flame and pour the carrot halwa into a serving bowl

4\. Garnish with roasted nuts and raisins
