Ingredients

Serves 4 servings
  • 3/4 cupbrown rice (about 100 grams)
  • 3/4 cupfresh lotus seeds, whole (about 100 grams)
  • 3/4 cupblack beans (about 100 grams)
  • 2 cupspumpkin, cut into cubes (about 300 grams)
  • 1 tablespoonsalt

    Rinse the brown rice. Add the black beans to boiling water for 1 minute to remove bitterness. Place the rice and beans in a double-layer pot, cook for 10 minutes, then transfer to a thermal cooker and let it sit overnight.

    In the morning, put the pot back on the stove. Add salt, lotus seeds, and pumpkin cut into 3/4-inch (2 cm) cubes to the porridge. Cook for about 10 minutes until everything is tender. Now you have a breakfast porridge with brown rice, black beans, lotus seeds, and pumpkin.

    If you prefer a sweet version, use sugar instead of salt. This is my wonderful breakfast, served with fruit, yogurt, and tea. Isn't it great? Take a little time and show love to your family and yourself. Smile in the morning for a refreshed and clear mind at work.
