Cabin cake
You just need a bit of patience but the results are finger licking good
Steps
- 1
We start with the filling: caramelize the sugar, but be careful not to burn it
- 2
When it turns dark brown, add the 12 tbsp of flour and mix well
- 3
Carefully add the milk and mix until it thickens a bit
- 4
Lastly add the butter and stir until it all melts and looks more like a pudding
- 5
Set aside to cool down and start with the dough
- 6
Mix the eggs with sugar until it is dissolved
- 7
Add the oil with the milk and then incorporate the flour with the salt and baking powder
- 8
Divide the dough in 10 balls
- 9
Take each roll and spread it thin and place it on the back of an oven tray
- 10
Place each sheet in the oven at 170°C for about 9 min
- 11
Set asside around 2 cups of filling
- 12
Take the first sheet and place it in a tray; spread a bit of filling on it and place the next sheet
- 13
Repeat until you have all the sheets stacked up with filling between them, don't spread filling on the top one
- 14
Place in the fridge for 3-4 hours or overnight with something a bit heavy so that it presses down eavenly
- 15
Take the cake out of the fridge and cut the sides so that it has a neat look
- 16
Divide it in 6
- 17
Take each peace and cut it diagonally (like in the picture)
- 18
"Glue" the 2 sides with some of the filling set aside
- 19
It should look more or less like a cabin or mountains
- 20
Pour the glaze on top of them and spread it so that it covers everything
- 21
Last step: pour some shredded coconut on top and place in the fridge for 1-2 hours
- 22
Hope you enjoy it
