Ingredients

  1. 2-3 lbsrusset potatoes, unpeeled and diced
  2. 1small onion, chopped or sliced
  3. 6 stripsbacon
  4. 6scallions thinly sliced
  5. 1 cupshredded cheese, I used sharp cheddar
  6. to tasteSour cream,
  7. 1/4 cupoil

Cooking Instructions

  1. 1

    Preheat oven to 425. Heat oil on medium high heat. Add potatoes and fry til golden and tender inside.

    Spread potatoes on a sheet pan in a single layer.

  3. 3

    Slice bacon and fry with onion in the same skillet until crispy.

  4. 4

    Sprinkle the bacon and onion on top of potatoes and add cheese over the top of that.

  5. 5

    Put sheet pan of potatoes in hot oven until cheese is melted.

  6. 6

    Serve up and add sour cream and scallions!'

I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
