Geera chicken is one of the many dishes from my homeland, Trinidad. Spicy and flavorful, it's served as a part of a meal or as "cutters" (finger food while hanging out).

Ingredients

12-15 minutes
4-8 servings
  1. 1 pounddiced chicken breast (seasoned)
  2. halfmedium onion (diced)
  3. 3garlic cloves (lightly crushed and roughly chopped)
  4. 8-12chadon beni leaves (culantro/recao) minced
  5. 2 tbspsoil
  6. 1/8 tspmethi (fenugreek)
  7. 2 tbspsroasted geera (cumin) divided
  8. 1pepper (minced)
  9. to tastesalt

Cooking Instructions

12-15 minutes

    When seasoning chicken, add one tbsp geera. Let marinate.

    Heat oil on medium heat. Add methi and let cook until brown.

  3. 3

    Add onion and garlic and cook until soft.

  4. 4

    Turn heat to low then add geera. Stir and let roast for 3 to 4 minutes.

  5. 5

    Turn heat up to medium and add seasoned chicken. Stir chicken to coat with geera in pot. Cover pot and let cook for about 5 minutes.

    Add chopped chadon beni and hot pepper and, if necessary, add water. Stir and cover for another 5 minutes

  7. 7

    Uncover and taste. Add salt if necessary. Turn heat up on high and let water evaporate.
