Ingredients

6 servings
  1. 200 gpunnet of cherry or grape tomatoes
  2. 3 clovesgarlic
  3. olive oil spray
  4. 400 gcan borlotti beans, drained and rinsed
  5. 220 gtub of cherry bocconcini cheese, drained, rinsed and sliced
  6. 70 gbaby rocket
  7. 1/4 cupfresh basil leaves, torn
  8. 1 tbslight olive oil
  9. 1/2 tbsbalsamic vinegar

Steps

  1. 1

    Preheat oven to 200°C. Place the cherry or grape tomatoes and garlic on an oven tray and lightly spray with olive oil spray. Bake for 30 minutes or until the tomatoes are soft and shrivelled.

    In a large salad bowl combine the borlotti beans, bocconcini cheese, rocket and basil.

  3. 3

    Once cooled slightly, add the roast tomatoes and any juices.

  4. 4

    Drizzle with combined olive oil, vinegar and mashed roasted garlic. Toss the salad to combine and serve immediately.
