Peel the eggplants and fry them in plenty of oil.

Finely chop the onion and sauté it in a little oil. Add the ground beef, salt, and pepper, and cook until browned.

Cut open one side of each eggplant and stuff with the cooked beef. Some people hollow out the eggplants before frying and then stuff them with the beef.

Chop the tomato, onion, and 2 garlic cloves in a food processor. Heat 1 tablespoon oil in a pot, add the tomato paste, and stir. Add the chopped mixture and a little water to make a sauce. Add 1 teaspoon salt and pepper. Add the stuffed eggplants to the sauce and simmer for about 15 minutes.

Meanwhile, make the yogurt sauce: Mash 2 garlic cloves with salt, then mix with the yogurt and tahini. Stir well.

Break the fried pita bread into pieces and place in a serving dish. Pour the tomato sauce over the bread, then add the yogurt-tahini sauce. Top with the stuffed eggplants, ground beef, and parsley. Serve immediately.
