I had a lot of Italian sausage and needed to cook it up. Cleaned out anything I had that is normally used in Italian dishes. Yummy.

Ingredients

  1. 5 cupscooked rice, cold
  2. 2 lbsbulk Italian sausage
  3. 1lg. Onion, diced
  4. 3celery ribs with leaves, diced
  5. I bell pepper (whatever you have), diced
  6. 6garlic cloves, minced
  7. 1/2 cupkalamata olives, drained & diced
  8. 1 canartichoke hearts, diced
  9. 1/2 pkg.pepperoni slices, cut in half
  10. 1-2 cupcanned tomatoes
  11. 2 TbspItalian seasoning
  12. 1/2 tspcrushed red pepper flakes
  13. Salt & pepper

Cooking Instructions

    Cook 2 1/2 cups rice in chicken stock according to directions. Once done spread on sheet to cool. You can use leftover rice if you are lucky to have it!

    While rice is cooling. Break up and brown the Italian sausage. Once done, remove from the pan and set aside.

    Drain excess fat from pan. Add in the onion, celery, pepper to sauté until tender. Then add in the spices. Stir to combine.

    Stir in the garlic to combine. Add the sausage back in.

  5. 5

    Add in the olives, artichoke hearts, pepperoni, and tomatoes. Stir to combine.

  6. 6

    Next add in the cold rice. Stir to combine.

  7. 7

    If need you can add in a little more stock. Enjoy.
